How they’re grownThe farm is located in Dutch Island Harbor, off of Jamestown in Narragansett Bay which is the largest estuary in all of New England. Estuaries are not only beautiful, but essential habitats and breeding grounds for thousands of wildlife species. This environment lends both a constant flow of nutrient-packed water that flushes the farm with phytoplankton [AKA oyster food) all day long, and open-water waves which tumble their floating gear, creating strong shells with A+ shuckability. Walrus and Carpenters begin their lives in upwellers before being moved to floating cages from which they are harvested at 14-20 months.

Why they're uniqueThese beauties were grown in the same town that Wes Anderson's Moonrise Kingdom was filmed! Rumor has it that you can taste the summer adventure in every bite.

How they tasteBeautiful, plum meat with a moderate swell of salt gives way to meadow grass, celery, and green veg. An earthy finish of nutritional yeast in a swirl of melted butter. In fact, Brad prefers his oysters grilled and topped with garlic butter, feeling that one can only eat so many raw oysters in a lifetime. Hehe!

StoryWalrus and Carpenter Oysters was started in 2009 by farmer Jules Opton, and grew from a small passion project to one of the most recognized brands in Rhode Island. In 2013, Brad Boehringer joined the Walrus and Carpenter team after years working for Fair Trade certification in Latin America. After a few years of gaining experience on the farm and running his own oyster company for a bit, Brad eventually bought Walrus and Carpenter from Jules, who was ready to embark on new adventures. Their ragtag crew takes great pride in their work in sun, rain, sleet or snow. They like to say, "It don't matter if it's snowin' or blowin', we're still goin'!" and it shows!
